The curriculum of Polish culinary schools does not keep up with the changing nutrition trends, such as the demand for fit and vegan food. The job market in the catering industry also does not favour young people, who in most cases work as dishwashers under zero-hour contracts. Graduates of culinary schools are therefore in a difficult position. It is safe to assume that after completing their education they will have difficulties finding and keeping a job based on an employment contract that is in line with their qualifications, pays adequate salary and gives them a chance to develop professionally.
How does innovation work?
“Eco-logic” is a series of workshops and a vegan cooking manual that equips catering students with skills that are sought after on the job market. During the workshops which involve lectures and practical activities, the students learn about the theory and practice of a healthy diet, the principles of vegan cuisine, and they have practical classes in frutarian, macrobiotic and raw food diet.

The third and fourth grade students of Zespół Szkół CKR in Stare Lubiejewo (vocational school and technical high school), learning the profession of “food and catering services technician” and “chef” and the third and fourth grade students of Zespół Szkół im. S. Staszica in Małkinia Górna (vocational school and technical high school), learning the profession of “food and catering services specialist”, “hospitality technician” and “chef” took part in a workshop on vegan cooking and healthy diet during the 2017-2018 school year and acquired skills in preparing food according to the latest trends in nutrition
